For the Spicy Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce (for depth of flavor)
  • 1 tbsp sesame oil
  • 1 tbsp sriracha or chili garlic sauce (adjust to taste)
  • 1 tbsp gochujang (Korean chili paste) or sambal oelek
  • 1 tsp honey or brown sugar (to balance the spice)
  • 1 tbsp rice vinegar or lime juice
  • ½ tsp crushed red pepper flakes (optional)
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced

For Toppings (Optional):

  • 1 tbsp green onions, sliced
  • 1 tbsp sesame seeds
  • ½ cup stir-fried vegetables (bell peppers, carrots, mushrooms, or bok choy)
  • ½ cup protein (tofu, shrimp, chicken, or beef)
  • 1 soft-boiled egg, halved
  • 1 tsp crushed peanuts or cashews

Instructions

  • Cook the Noodles:

    • Boil water with salt in a large pot.
    • Add noodles and cook according to package instructions (typically 4-6 minutes).
    • Drain and rinse under cold water to prevent sticking.
  • Prepare the Spicy Sauce:

    • In a bowl, whisk together soy sauce, dark soy sauce, sesame oil, sriracha, gochujang, honey, vinegar, red pepper flakes, garlic, and ginger.
  • Stir-Fry & Assemble:

    • Heat 1 tbsp sesame oil in a pan over medium heat.
    • Add any protein or vegetables and cook for 3-5 minutes.
    • Toss in cooked noodles and pour the spicy sauce over them.
    • Stir-fry for 2-3 minutes, coating the noodles evenly.
  • Garnish & Serve:

    • Transfer to a bowl and sprinkle with green onions, sesame seeds, and crushed peanuts.
    • Serve hot with a soft-boiled egg or extra chili sauce for more heat.
