- 4 cups water (for boiling)
- 1 tsp salt
For the Spicy Sauce:
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce (for depth of flavor)
- 1 tbsp sesame oil
- 1 tbsp sriracha or chili garlic sauce (adjust to taste)
- 1 tbsp gochujang (Korean chili paste) or sambal oelek
- 1 tsp honey or brown sugar (to balance the spice)
- 1 tbsp rice vinegar or lime juice
- ½ tsp crushed red pepper flakes (optional)
- 1 tsp garlic, minced
- 1 tsp ginger, minced
For Toppings (Optional):
- 1 tbsp green onions, sliced
- 1 tbsp sesame seeds
- ½ cup stir-fried vegetables (bell peppers, carrots, mushrooms, or bok choy)
- ½ cup protein (tofu, shrimp, chicken, or beef)
- 1 soft-boiled egg, halved
- 1 tsp crushed peanuts or cashews
Instructions

Cook the Noodles:
- Boil water with salt in a large pot.
- Add noodles and cook according to package instructions (typically 4-6 minutes).
- Drain and rinse under cold water to prevent sticking.

Prepare the Spicy Sauce:
- In a bowl, whisk together soy sauce, dark soy sauce, sesame oil, sriracha, gochujang, honey, vinegar, red pepper flakes, garlic, and ginger.

Stir-Fry & Assemble:
- Heat 1 tbsp sesame oil in a pan over medium heat.
- Add any protein or vegetables and cook for 3-5 minutes.
- Toss in cooked noodles and pour the spicy sauce over them.
- Stir-fry for 2-3 minutes, coating the noodles evenly.

Garnish & Serve:
- Transfer to a bowl and sprinkle with green onions, sesame seeds, and crushed peanuts.
- Serve hot with a soft-boiled egg or extra chili sauce for more heat.
