- 1 lb shrimp, peeled and deveined
- 2 cups sushi rice
- 1/4 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 2 sheets nori, cut into strips
- Sesame seeds for garnish
- Soy sauce for serving
Instructions
- Cook sushi rice according to package instructions and let it cool.
- In a bowl, mix mayonnaise and sriracha sauce to create a spicy mayo.
- In a skillet, cook shrimp over medium heat until pink and cooked through, about 3-4 minutes.
- Layer the sushi rice, shrimp, avocado, and cucumber in a stack, using a ring mold if desired.
- Drizzle spicy mayo on top and sprinkle with sesame seeds.
- Serve with soy sauce on the side.
