Ingredients

  • 2 cups sushi rice
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 2 sheets nori, cut into strips
  • Sesame seeds for garnish
  • Soy sauce for serving

Instructions

  1. Cook sushi rice according to package instructions and let it cool.
  2. In a bowl, mix mayonnaise and sriracha sauce to create a spicy mayo.
  3. In a skillet, cook shrimp over medium heat until pink and cooked through, about 3-4 minutes.
  4. Layer the sushi rice, shrimp, avocado, and cucumber in a stack, using a ring mold if desired.
  5. Drizzle spicy mayo on top and sprinkle with sesame seeds.
  6. Serve with soy sauce on the side.
