Description

Try Spinach Florentine Breakfast Casserole! A protein-packed, veggie-filled dish perfect for brunch or meal prep.

Ingredients

Scale

  • 8 large eggs
  • 2 cups milk
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 2 cups fresh spinach, chopped
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional add-ins: 1 cup cooked sausage, 1/2 cup diced mushrooms, or 1/4 cup fresh herbs (parsley or chives)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare the Veggies:
    • In a skillet, sauté the onions and bell peppers over medium heat until softened (about 5 minutes).
    • Add the spinach and cook until wilted (2-3 minutes). Set aside.
  3. Prepare the Egg Mixture:
    • In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
  4. Combine the Ingredients:
    • Add the cooked veggies and shredded cheese to the egg mixture. Stir to combine.
    • If using optional add-ins like sausage or mushrooms, fold them in at this stage.
  5. Transfer to the Baking Dish:
    • Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake to Perfection:
    • Bake for 35-40 minutes, or until the top is golden brown and the center is set (a toothpick inserted should come out clean).
  7. Cool and Serve:
    • Let the casserole cool for 5-10 minutes before slicing.
    • Serve warm or at room temperature.

Notes

  1. Use Fresh Spinach: It adds the best flavor and texture, but you can use frozen spinach if drained well.
  2. Don’t Overcook the Eggs: The casserole should be set but still moist in the center.
  3. Add Extra Toppings: Sprinkle with extra cheese or fresh herbs before baking for added flavor.
  4. Make It Ahead: Assemble the casserole and refrigerate it overnight before baking.
  5. Customize the Veggies: Add mushrooms, zucchini, or tomatoes for extra variety.
  6. Go Meatless: Skip the sausage and add more veggies or tofu for a vegetarian version.
  7. Reheat Properly: Microwave leftovers for 1-2 minutes or reheat in the oven at 350°F (175°C) for 10-15 minutes.
