Ingredients
Scale
- 8 large eggs
- 2 cups milk
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 2 cups fresh spinach, chopped
- 1 cup diced onions
- 1 cup diced bell peppers
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- Optional add-ins: 1 cup cooked sausage, 1/2 cup diced mushrooms, or 1/4 cup fresh herbs (parsley or chives)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Prepare the Veggies:
- In a skillet, sauté the onions and bell peppers over medium heat until softened (about 5 minutes).
- Add the spinach and cook until wilted (2-3 minutes). Set aside.
- Prepare the Egg Mixture:
- In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
- Combine the Ingredients:
- Add the cooked veggies and shredded cheese to the egg mixture. Stir to combine.
- If using optional add-ins like sausage or mushrooms, fold them in at this stage.
- Transfer to the Baking Dish:
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake to Perfection:
- Bake for 35-40 minutes, or until the top is golden brown and the center is set (a toothpick inserted should come out clean).
- Cool and Serve:
- Let the casserole cool for 5-10 minutes before slicing.
- Serve warm or at room temperature.
Notes
- Use Fresh Spinach: It adds the best flavor and texture, but you can use frozen spinach if drained well.
- Don’t Overcook the Eggs: The casserole should be set but still moist in the center.
- Add Extra Toppings: Sprinkle with extra cheese or fresh herbs before baking for added flavor.
- Make It Ahead: Assemble the casserole and refrigerate it overnight before baking.
- Customize the Veggies: Add mushrooms, zucchini, or tomatoes for extra variety.
- Go Meatless: Skip the sausage and add more veggies or tofu for a vegetarian version.
- Reheat Properly: Microwave leftovers for 1-2 minutes or reheat in the oven at 350°F (175°C) for 10-15 minutes.
