Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan or line with parchment paper.
- In a large bowl, mix melted butter and brown sugar until smooth. Add egg, vanilla extract, lemon zest, and lemon juice, whisking until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid over-mixing.
- Gently fold in the chopped strawberries and white chocolate chips if desired.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the blondies cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
