Delicious and healthy Strawberry Oatmeal Crumble Bars made with fresh strawberries and a crumbly oat topping.
Ingredients

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups fresh strawberries, hulled and sliced
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together oats, flour, brown sugar, melted butter, vanilla extract, and salt until crumbly.
- Press half of the oat mixture into the bottom of a greased baking pan.
- In another bowl, combine sliced strawberries, lemon juice, and cornstarch. Mix well.
- Spread the strawberry mixture over the oat base in the baking pan.
- Sprinkle the remaining oat mixture on top of the strawberries.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
- For a vegan version, substitute butter with coconut oil.
- Feel free to add nuts or seeds for extra crunch.
- Store leftovers in an airtight container in the refrigerator.
