Delicious and healthy strawberry oatmeal crumble bars that are perfect for dessert or a snack.
Ingredients

- 2 cups rolled oats
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups fresh strawberries, chopped
- 2 tablespoons honey
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix rolled oats, whole wheat flour, brown sugar, melted butter, vanilla extract, and salt until crumbly.
- Press half of the mixture into the bottom of a greased baking dish.
- In another bowl, combine chopped strawberries, honey, and lemon juice.
- Spread the strawberry mixture over the crust in the baking dish.
- Sprinkle the remaining oat mixture on top of the strawberries.
- Bake for 25-30 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
- For a vegan option, substitute butter with coconut oil and honey with maple syrup.
- These bars can be stored in an airtight container for up to a week.
- Feel free to add nuts or seeds for extra crunch.
