Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 2 tablespoons honey
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix rolled oats, whole wheat flour, brown sugar, melted butter, vanilla extract, and salt until crumbly.
  3. Press half of the mixture into the bottom of a greased baking dish.
  4. In another bowl, combine chopped strawberries, honey, and lemon juice.
  5. Spread the strawberry mixture over the crust in the baking dish.
  6. Sprinkle the remaining oat mixture on top of the strawberries.
  7. Bake for 25-30 minutes or until the top is golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • For a vegan option, substitute butter with coconut oil and honey with maple syrup.
  • These bars can be stored in an airtight container for up to a week.
