Ingredients

1 cup brown sugar
¾ cup butter
1 egg
2 tbsp molasses
1 tbsp fresh grated ginger
1½ tsp ground ginger
2¼ cups flour
1 tsp baking soda
½ tsp cinnamon
½ tsp salt
⅓ cup crystallized ginger
Extra sugar for rolling
Instructions
Cream butter and sugar.
Add egg, molasses, fresh ginger.
Stir in dry ingredients.
Fold in crystallized ginger.
Roll into balls, coat in sugar.
Bake at 350°F for 10–12 minutes.
