Description

Make these super moist and flavorful Pineapple Bars with a buttery shortbread base, pineapple pecan filling, and luscious icing.

Ingredients

Scale

Bottom Layer:

  • ½ cup butter (melted, one stick)
  • ¼ cup sugar
  • 1 ¼ cups flour (168 grams)

Top Layer:

  • 2 large eggs (beaten)
  • ½ cup brown sugar (packed)
  • 1 cup drained crushed pineapple (reserve the juice)
  • ½ cup pecans (chopped)
  • 2 tablespoons flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Icing:

  • 1 ½ cups powdered sugar (170 grams)
  • ½ cup butter (softened)
  • 2 tablespoons pineapple juice

Instructions

1. Preheat the Oven

Preheat your oven to 350°F (175°C). Prepare a 9×9-inch baking pan by coating it with cooking spray and lining it with parchment paper.

2. Prepare the Bottom Layer

  • Combine melted butter, sugar, and flour in a bowl. Mix until crumbly.
  • Press the mixture evenly into the prepared pan.
  • Bake for 10-15 minutes or until golden brown. Allow to cool slightly.

3. Prepare the Top Layer

  • Mix the beaten eggs, brown sugar, crushed pineapple, chopped pecans, flour, baking powder, and salt in a bowl until well combined.
  • Pour the mixture over the cooled bottom layer.
  • Bake for 20-25 minutes, or until the top layer is set and golden. Let cool completely.

4. Make the Icing

  • Beat powdered sugar, softened butter, and pineapple juice together until smooth. Adjust consistency with more powdered sugar or juice if needed.
  • Spread the icing evenly over the cooled bars.

5. Chill

Refrigerate the bars for at least 1 hour to allow the icing to set.

6. Serve

Remove the bars from the pan and cut them into 24 squares. Serve chilled or at room temperature.

Notes

  • Drain the Pineapple: Ensure the crushed pineapple is well-drained to avoid a soggy filling.
  • Chill for Clean Cuts: Chilling the bars before cutting ensures neat and precise squares.
  • Enhance Flavor: Toast the pecans beforehand for a deeper nutty flavor.
  • Customize the Icing: Add a splash of vanilla extract to the icing for an extra layer of flavor.
  • Use Fresh Pineapple Juice: Fresh juice enhances the tropical flavor compared to canned juice.
