For the Stir Fry:

  • 1 lb venison steak, thinly sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce (or coconut aminos for a gluten-free option)
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil (for stir-frying)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup carrots, julienned
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes (optional, for spice)
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 teaspoon sesame seeds (optional, for garnish)

For the Stir Fry Sauce:

  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon cornstarch, dissolved in 2 tablespoons of water

Instructions

Step 1: Prepare the Venison

  1. Slice the venison steak thinly against the grain for tenderness.
  2. In a bowl, toss venison slices with cornstarch and soy sauce. Let marinate for 10-15 minutes to enhance tenderness and flavor.

Step 2: Make the Stir Fry Sauce

  1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, honey, sesame oil, rice vinegar, and cornstarch slurry.
  2. Set aside until ready to use.

Step 3: Stir-Fry the Venison

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
  2. Add marinated venison slices and stir-fry for 2-3 minutes until browned but not overcooked.
  3. Remove from the pan and set aside.

Step 4: Stir-Fry the Vegetables

  1. In the same pan, add another tablespoon of vegetable oil.
  2. Stir-fry garlic, ginger, and red pepper flakes for 30 seconds until fragrant.
  3. Add bell peppers, broccoli, and carrots. Stir-fry for 3-4 minutes until slightly tender but still crisp.

Step 5: Combine Everything

  1. Return the venison to the pan with the vegetables.
  2. Pour in the stir fry sauce and toss everything together.
  3. Cook for another 1-2 minutes until the sauce thickens and coats the ingredients evenly.

Step 6: Serve & Enjoy

  1. Garnish with chopped green onions and sesame seeds.
  2. Serve hot over steamed rice, quinoa, or noodles.
  3. Enjoy your homemade venison stir fry!

Notes

Slice Venison Thinly – Cutting against the grain results in more tender, easy-to-eat pieces.
Use Cornstarch in the Marinade – This helps lock in moisture and prevents overcooking.
Don’t Overcook Venison – Since venison is lean, it cooks quickly; stir-fry for just 2-3 minutes.
Customize Your Vegetables – Swap out veggies with snap peas, mushrooms, or zucchini for variety.
Balance Sweet & Savory – Adjust the amount of honey and soy sauce for your preferred taste.
Spicy Option – Add more red pepper flakes or sriracha for an extra kick.
