Cake Ingredients:
- 2 ¾ cups cake flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened

- 5 large egg whites

- 1 ½ teaspoons almond extract
- ½ cup sour cream
Almond Buttercream Frosting:

- 4 cups powdered sugar
- 2 teaspoons almond extract

- reheat & Prepare – Preheat the oven to 350°F (175°C). Grease and flour three 8-inch cake pans or line them with parchment paper.
- Mix Dry Ingredients – In a medium bowl, whisk together cake flour, baking powder, and salt. Set aside.
- Cream Butter & Sugar – Beat butter and sugar until light and fluffy, about 3-4 minutes.
- Add Egg Whites – Slowly add egg whites one at a time, beating well after each addition.
- Incorporate Extracts – Mix in almond and vanilla extracts for that signature wedding cake flavor.
- Alternate Dry & Wet Ingredients – Gradually add the dry ingredients, alternating with milk and sour cream, mixing just until combined.
- Bake the Cake – Divide the batter evenly between the three cake pans and bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
- Cool the Cakes – Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Make Buttercream Frosting – Beat butter until smooth, add powdered sugar, almond extract, and heavy cream, and mix until smooth.
- Frost & Decorate – Spread frosting between layers and over the entire cake. Decorate with pearls, flowers, or slivered almonds.
