Instructions
- Preheat the oven to 375°F (190°C).
- Make the taco shells:
- Mix sugar and cinnamon in a bowl.

- Drape tortillas over an upside-down muffin tin to form taco shapes.

- Prepare the cheesecake filling:
- In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Assemble the tacos:
- Fill each cooled taco shell with cheesecake filling.
- Top with apple pie filling.
- Drizzle with caramel sauce and add optional toppings.
