For the Meatloaf:

  • 1 ½ lbs ground beef (80/20 recommended)
  • ½ lb bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • ½ cup breadcrumbs (or almond flour for keto)
  • 2 large eggs
  • ¼ cup mayonnaise
  • ¼ cup ketchup
  • 1 tbsp mustard
  • ½ cup diced onion
  • ½ cup diced pickles
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper

For the Glaze:

  • ¼ cup ketchup
  • 2 tbsp mustard
  • 2 tbsp brown sugar (optional for a touch of sweetness)

Instructions

Step 1: Prepare the Bacon

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a skillet over medium heat until crispy, then crumble it.
  3. Set aside half of the bacon for mixing into the meatloaf and the other half for topping.

Step 2: Mix the Meatloaf Ingredients

  1. In a large bowl, combine ground beef, crumbled bacon, shredded cheese, breadcrumbs, eggs, mayonnaise, ketchup, mustard, onion, pickles, garlic powder, salt, and black pepper.
  2. Mix well until evenly incorporated but do not overmix.

Step 3: Shape the Meatloaf

  1. Line a baking sheet with parchment paper or grease a loaf pan.
  2. Shape the meat mixture into a loaf and place it on the prepared baking sheet.

Step 4: Add the Glaze

  1. In a small bowl, mix together ketchup, mustard, and brown sugar.
  2. Brush half of the glaze over the meatloaf before baking.

Step 5: Bake the Meatloaf

  1. Bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
  2. Remove from the oven and spread the remaining glaze on top.
  3. Sprinkle with the reserved crispy bacon.
  4. Return to the oven for another 5-10 minutes for caramelization.

Step 6: Rest and Serve

  1. Let the meatloaf rest for 5-10 minutes before slicing.
  2. Serve warm and enjoy!
