For the Carrot Cake:
- 3 large eggs
- ¾ cup granulated sugar

Instructions
Step 1: Preheat and Prepare
- Preheat oven to 350°F (175°C).
- Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- Prepare a clean kitchen towel by dusting it with powdered sugar to prevent sticking.
Step 2: Make the Carrot Cake Batter
- In a large bowl, beat together eggs, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Gradually fold the dry ingredients into the wet ingredients, mixing until just combined.
- Stir in grated carrots and vegetable oil.
Step 3: Bake the Cake
- Spread the batter evenly in the prepared jelly roll pan.
- Bake for 12-14 minutes, or until the cake springs back when touched.
Step 4: Roll the Cake While Warm
- As soon as the cake comes out of the oven, carefully flip it onto the prepared kitchen towel.
- Gently peel off the parchment paper.
- Roll the cake from the short side, using the towel to help guide it.
- Let it cool completely while rolled.
Step 5: Prepare the Cream Cheese Filling
- In a bowl, beat cream cheese, powdered sugar, butter, and vanilla extract until smooth and creamy.
Step 6: Fill and Roll the Cake
- Carefully unroll the cooled cake and spread the cream cheese filling evenly.
- Gently roll the cake back up (without the towel) and wrap it in plastic wrap.
- Refrigerate for at least 30 minutes to set.
Step 7: Garnish and Serve
- Dust with powdered sugar before slicing.
- Slice and serve chilled.
