Instructions

Step 1: Preheat and Prepare

  1. Preheat oven to 350°F (175°C).
  2. Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  3. Prepare a clean kitchen towel by dusting it with powdered sugar to prevent sticking.

Step 2: Make the Carrot Cake Batter

  1. In a large bowl, beat together eggs, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
  2. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Gradually fold the dry ingredients into the wet ingredients, mixing until just combined.
  4. Stir in grated carrots and vegetable oil.

Step 3: Bake the Cake

  1. Spread the batter evenly in the prepared jelly roll pan.
  2. Bake for 12-14 minutes, or until the cake springs back when touched.

Step 4: Roll the Cake While Warm

  1. As soon as the cake comes out of the oven, carefully flip it onto the prepared kitchen towel.
  2. Gently peel off the parchment paper.
  3. Roll the cake from the short side, using the towel to help guide it.
  4. Let it cool completely while rolled.

Step 5: Prepare the Cream Cheese Filling

  1. In a bowl, beat cream cheese, powdered sugar, butter, and vanilla extract until smooth and creamy.

Step 6: Fill and Roll the Cake

  1. Carefully unroll the cooled cake and spread the cream cheese filling evenly.
  2. Gently roll the cake back up (without the towel) and wrap it in plastic wrap.
  3. Refrigerate for at least 30 minutes to set.

  1. Dust with powdered sugar before slicing.
