For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
For the Sauce:
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 (14 oz) can crushed tomatoes
- ½ cup chicken broth (or white wine)
- 1 teaspoon sugar (optional, to balance acidity)
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional)
- ¼ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
For the Topping:
- 1 ½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tablespoon fresh basil, chopped

Season & Sear the Chicken
- Season chicken with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 3-4 minutes per side until golden brown. Remove from skillet and set aside.

Prepare the Tomato Sauce
- In the same skillet, sauté chopped onions for 2-3 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Pour in crushed tomatoes and chicken broth (or white wine).
- Stir in sugar, oregano, red pepper flakes, salt, black pepper, and basil.
- Simmer for 5-7 minutes, stirring occasionally.

Simmer the Chicken
- Return the seared chicken to the skillet, nestling it into the sauce.
- Cover and let simmer for 10 minutes until the chicken is cooked through.

Add Cheese & Melt
- Sprinkle mozzarella and Parmesan cheese over the chicken.
- Cover the skillet and cook for 2-3 more minutes until the cheese is melted and bubbly.
- Remove from heat and garnish with fresh basil.

- Serve hot with pasta, rice, or crusty bread.
- Garnish with extra Parmesan and fresh basil.
Notes
- Use a meat thermometer to check doneness (165°F/75°C).
- Broil for 2 minutes at the end for extra golden cheese.
- Let the sauce simmer longer for a deeper flavor.
- Swap mozzarella for provolone or gouda for a different cheese twist.
- Store leftovers in an airtight container for up to 3 days and reheat in the oven at 350°F (175°C) for 10 minutes.
