Description

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

For the Sauce:

  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (14 oz) can crushed tomatoes
  • ½ cup chicken broth (or white wine)
  • 1 teaspoon sugar (optional, to balance acidity)
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • ¼ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)

For the Topping:

  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh basil, chopped

Instructions

  • Season & Sear the Chicken

    • Season chicken with salt, pepper, garlic powder, onion powder, and Italian seasoning.
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear chicken for 3-4 minutes per side until golden brown. Remove from skillet and set aside.
  • Prepare the Tomato Sauce

    • In the same skillet, sauté chopped onions for 2-3 minutes until soft.
    • Add garlic and cook for 30 seconds until fragrant.
    • Pour in crushed tomatoes and chicken broth (or white wine).
    • Stir in sugar, oregano, red pepper flakes, salt, black pepper, and basil.
    • Simmer for 5-7 minutes, stirring occasionally.
  • Simmer the Chicken

    • Return the seared chicken to the skillet, nestling it into the sauce.
    • Cover and let simmer for 10 minutes until the chicken is cooked through.
  • Add Cheese & Melt

    • Sprinkle mozzarella and Parmesan cheese over the chicken.
    • Cover the skillet and cook for 2-3 more minutes until the cheese is melted and bubbly.
    • Remove from heat and garnish with fresh basil.
  • Serve & Enjoy

    • Serve hot with pasta, rice, or crusty bread.
    • Garnish with extra Parmesan and fresh basil.

Notes

  • Use a meat thermometer to check doneness (165°F/75°C).
  • Broil for 2 minutes at the end for extra golden cheese.
  • Let the sauce simmer longer for a deeper flavor.
  • Swap mozzarella for provolone or gouda for a different cheese twist.
  • Store leftovers in an airtight container for up to 3 days and reheat in the oven at 350°F (175°C) for 10 minutes.
