Ingredients

Scale

For the Casserole:

  • 1 can (16.3 oz) refrigerated biscuits (Pillsbury Grands or similar)
  • 8 large eggs
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried parsley (optional, for garnish)
  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 slices bacon, cooked and crumbled
  • 2 tablespoons melted butter (for brushing)

Optional Add-ins:

  • ½ cup cooked sausage or diced ham
  • ½ cup chopped bell peppers or mushrooms
  • ½ teaspoon smoked paprika for extra depth
  • ¼ teaspoon red pepper flakes for a spicy kick

Instructions

  • Preheat & Prepare the Dish

    • Preheat oven to 375°F (190°C).
    • Grease a 9×13-inch baking dish with butter or non-stick spray.
  • Cook the Bacon

    • In a skillet over medium heat, cook bacon until crispy.
    • Transfer to a paper towel-lined plate and crumble once cooled.
  • Prepare the Biscuits

    • Open the can of biscuits and cut each biscuit into quarters.
    • Arrange the biscuit pieces evenly in the greased baking dish.
  • Whisk the Eggs

    • In a mixing bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
    • Pour the egg mixture evenly over the biscuits.
  • Add Bacon & Cheese

    • Sprinkle the crumbled bacon evenly over the top.
    • Add shredded cheddar and mozzarella cheese for a gooey, cheesy texture.
  • Bake the Casserole

    • Cover with foil and bake for 25 minutes.
    • Remove foil, brush the top with melted butter, and bake uncovered for another 10-15 minutes until eggs are set and biscuits are golden.
  • Serve & Enjoy!

    • Let the casserole cool for 5 minutes, then slice into squares.
    • Garnish with fresh parsley and serve warm.

Notes

  • Cover with foil first to prevent over-browning, then bake uncovered for a crispy top.
  • Make it ahead by assembling the night before and baking fresh in the morning.
  • For a spicy twist, add red pepper flakes or diced jalapeños.
  • Pair with fresh fruit or hash browns for a complete meal.
  • Store leftovers in the fridge for up to 4 days and reheat in the oven at 350°F (175°C) for 10-15 minutes.
