- 1 cup orzo pasta
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- Zest and juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the orzo pasta and cook according to package instructions, usually about 8-10 minutes, stirring occasionally.
- Once the orzo is cooked, reduce the heat to low and stir in the heavy cream.
- Add the shredded chicken, lemon zest, and lemon juice, stirring to combine.
- Season with salt and pepper to taste. Let the soup simmer for 5 more minutes to heat through.
- Serve hot, garnished with fresh parsley.

- This soup can be prepared ahead of time for quick meals.
- For a lighter version, use half-and-half instead of heavy cream.
