- 1 can of artichoke hearts, drained and rinsed
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- Cooking oil spray
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and lightly spray with cooking oil.
- In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and black pepper.
- In another bowl, beat the eggs until well combined.
- Dip each artichoke heart into the beaten eggs, allowing any excess to drip off.
- Roll the coated artichoke heart in the breadcrumb mixture, pressing gently to ensure a good coating.
- Place the breaded artichoke hearts on the prepared baking sheet.
- Lightly spray the tops of the artichoke hearts with cooking oil for extra crispiness.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven and let them cool slightly before serving.
