Crust and Crumbles:

  • 140 grams (1 cup) all-purpose flour
  • 144 grams (1 and 1/2 cups) rolled oats
  • 140 grams (2/3 cup) granulated sugar
  • 150 grams (2/3 cup) unsalted butter, melted and cooled

Blueberry Filling:

  • 300 grams (2 cups) blueberries
  • 50 grams (1/4 cup) granulated sugar
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice
  • 1 and 1/2 teaspoons lemon zest (zest of 1 large lemon)

Instructions

  • Preheat your oven to 350°F (177°C). Grease an 8-inch (20cm) square baking dish and line with parchment paper, leaving an overhang for easy removal.
  • In a medium bowl, mix flour, rolled oats, and sugar. Stir in melted butter until combined.
  • Reserve 1/3 of the mixture (approximately 190 grams) for the crumble topping. Press the remaining mixture evenly into the prepared baking dish to form the crust.
  • In another bowl, toss blueberries with sugar, cornstarch, lemon juice, and lemon zest until coated. Spread this mixture over the crust.
  • Sprinkle the reserved crumble mixture over the blueberries, pressing lightly to adhere.
  • Bake for 38-40 minutes until the top is golden brown and the filling is bubbling.
  • Cool completely in the dish before slicing into bars.
