For the Filling:
- 1 lb ground beef (or shredded chicken, black beans for vegetarian)
- 1 tbsp olive oil
- ½ cup diced onion
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder

- ½ tsp salt
- ¼ tsp black pepper
- 1 cup corn kernels
- 1 cup black beans, drained and rinsed
- 1 can (10 oz) red enchilada sauce
For Assembling the Pie:
- 6 corn tortillas (flour tortillas work too)
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- ½ cup sour cream
- ¼ cup chopped cilantro
- ½ cup diced tomatoes (for topping)
- Sliced jalapeños (optional for heat)
Instructions
Step 1: Preheat and Prep
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9-inch baking dish.
Step 2: Cook the Filling
- Heat olive oil in a skillet over medium heat.
- Sauté onions until translucent, then add garlic.
- Add ground beef (or protein of choice) and cook until browned.
- Stir in cumin, chili powder, paprika, salt, and black pepper.
- Mix in corn, black beans, and ½ cup enchilada sauce.
- Simmer for 5 minutes, then remove from heat.
Step 3: Assemble the Pie
- Spread 2 tbsp enchilada sauce on the bottom of the baking dish.
- Layer two tortillas, covering the bottom.
- Spread ⅓ of the beef mixture over the tortillas.
- Sprinkle with ½ cup shredded cheese.
- Repeat layers two more times, finishing with tortillas on top.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
Step 4: Bake to Perfection
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for another 10 minutes, until cheese is melted and bubbly.
- Let rest for 5 minutes before slicing.
Step 5: Serve and Enjoy!
- Top with sour cream, fresh cilantro, diced tomatoes, and jalapeños.
- Slice and serve warm with a side of Mexican rice or guacamole.
