  • 1 tsp cumin

  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 can (10 oz) red enchilada sauce

For Assembling the Pie:

  • 6 corn tortillas (flour tortillas work too)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • ½ cup sour cream
  • ¼ cup chopped cilantro
  • ½ cup diced tomatoes (for topping)
  • Sliced jalapeños (optional for heat)

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9-inch baking dish.

Step 2: Cook the Filling

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onions until translucent, then add garlic.
  3. Add ground beef (or protein of choice) and cook until browned.
  4. Stir in cumin, chili powder, paprika, salt, and black pepper.
  5. Mix in corn, black beans, and ½ cup enchilada sauce.
  6. Simmer for 5 minutes, then remove from heat.

Step 3: Assemble the Pie

  1. Spread 2 tbsp enchilada sauce on the bottom of the baking dish.
  2. Layer two tortillas, covering the bottom.
  3. Spread ⅓ of the beef mixture over the tortillas.
  4. Sprinkle with ½ cup shredded cheese.
  5. Repeat layers two more times, finishing with tortillas on top.
  6. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.

Step 4: Bake to Perfection

  1. Cover with foil and bake for 20 minutes.
  2. Remove foil and bake for another 10 minutes, until cheese is melted and bubbly.
  3. Let rest for 5 minutes before slicing.
