- 1 lb ground beef (85% lean)
- 3 large potatoes (russet or Yukon gold, diced)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder (optional)
- 2 tablespoons olive oil or butter
- 1/2 cup beef broth
- 1/2 cup shredded cheese (optional)
- Fresh parsley (for garnish)
Instructions
1️⃣ Cook the Potatoes:
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add diced potatoes, season with salt & pepper, and cook for 10 minutes, stirring occasionally.
- Once golden brown, remove and set aside.
2️⃣ Brown the Ground Beef:
- In the same skillet, add 1 tbsp olive oil, chopped onion, and minced garlic.
- Sauté for 2-3 minutes until fragrant.
- Add ground beef, breaking it apart with a spatula, and cook until browned (about 7-8 minutes).
- Drain excess grease if necessary.
3️⃣ Season and Simmer:
- Sprinkle in paprika, oregano, chili powder, salt, and pepper.
- Stir well, then pour in beef broth and let it simmer for 5 minutes.
4️⃣ Combine Everything:
- Return cooked potatoes to the skillet, mixing them with the beef.
- Cook for another 5 minutes, stirring occasionally.
- If using, sprinkle cheese over the top and let it melt.
5️⃣ Serve and Enjoy:
- Garnish with fresh parsley and serve hot!
