  • 3 large potatoes (russet or Yukon gold, diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder (optional)
  • 2 tablespoons olive oil or butter
  • 1/2 cup beef broth
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley (for garnish)

Instructions

1️⃣ Cook the Potatoes:

  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add diced potatoes, season with salt & pepper, and cook for 10 minutes, stirring occasionally.
  • Once golden brown, remove and set aside.

2️⃣ Brown the Ground Beef:

  • In the same skillet, add 1 tbsp olive oil, chopped onion, and minced garlic.
  • Sauté for 2-3 minutes until fragrant.
  • Add ground beef, breaking it apart with a spatula, and cook until browned (about 7-8 minutes).
  • Drain excess grease if necessary.

3️⃣ Season and Simmer:

  • Sprinkle in paprika, oregano, chili powder, salt, and pepper.
  • Stir well, then pour in beef broth and let it simmer for 5 minutes.

4️⃣ Combine Everything:

  • Return cooked potatoes to the skillet, mixing them with the beef.
  • Cook for another 5 minutes, stirring occasionally.
  • If using, sprinkle cheese over the top and let it melt.

5️⃣ Serve and Enjoy:

  • Garnish with fresh parsley and serve hot!
