Ingredients
Scale
- 1 pound ground beef
- 4 medium potatoes, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
- Shredded cheddar cheese (optional, for topping)
Instructions
- Prepare the skillet: Heat olive oil in a large skillet over medium heat.
- Cook the beef: Add ground beef to the skillet. Cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
- Add vegetables: Stir in the onion, bell pepper, and garlic. Cook for 3–4 minutes until softened.
- Cook the potatoes: Add the diced potatoes, smoked paprika, oregano, salt, pepper, and red pepper flakes. Stir well to combine.
- Simmer and cover: Reduce heat to low. Cover the skillet and cook for 15–20 minutes, stirring occasionally, until the potatoes are tender.
- Finish and serve: Garnish with fresh parsley and top with shredded cheddar cheese, if desired. Serve warm.
Notes
- Choose the right potatoes: Yukon Gold or red potatoes hold their shape best.
- Spice it up: Adjust the heat by adding more crushed red pepper flakes or cayenne pepper.
- Make it cheesy: Stir in shredded cheese before serving for a creamy, cheesy texture.
- Add more vegetables: Mushrooms, peas, or corn can add extra flavor and nutrition.
- Meal prep friendly: Store leftovers in the refrigerator for up to 3 days. Reheat in a skillet for the best texture.
- Flavor boost: Add a splash of Worcestershire sauce for added umami flavor.
