Description

Make this quick one-pan ground beef and potatoes recipe—hearty, flavorful, and ready in just 30 minutes. Perfect for busy weeknights!

Ingredients

Scale

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • Shredded cheddar cheese (optional, for topping)

Instructions

  1. Prepare the skillet: Heat olive oil in a large skillet over medium heat.
  2. Cook the beef: Add ground beef to the skillet. Cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
  3. Add vegetables: Stir in the onion, bell pepper, and garlic. Cook for 3–4 minutes until softened.
  4. Cook the potatoes: Add the diced potatoes, smoked paprika, oregano, salt, pepper, and red pepper flakes. Stir well to combine.
  5. Simmer and cover: Reduce heat to low. Cover the skillet and cook for 15–20 minutes, stirring occasionally, until the potatoes are tender.
  6. Finish and serve: Garnish with fresh parsley and top with shredded cheddar cheese, if desired. Serve warm.

Notes

  • Choose the right potatoes: Yukon Gold or red potatoes hold their shape best.
  • Spice it up: Adjust the heat by adding more crushed red pepper flakes or cayenne pepper.
  • Make it cheesy: Stir in shredded cheese before serving for a creamy, cheesy texture.
  • Add more vegetables: Mushrooms, peas, or corn can add extra flavor and nutrition.
  • Meal prep friendly: Store leftovers in the refrigerator for up to 3 days. Reheat in a skillet for the best texture.
  • Flavor boost: Add a splash of Worcestershire sauce for added umami flavor.
