For the Salmon Patties:
- 1 can (14-15 oz) salmon, drained and flaked (or 2 cups cooked fresh salmon)
- ½ cup breadcrumbs (or crushed crackers)
- 1 large egg, beaten
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
- ¼ cup finely diced onion
- 2 tablespoons finely diced celery (optional)
- 1 tablespoon olive oil (for cooking)
- 1 tablespoon butter (for cooking)

Prepare the Salmon:
- If using canned salmon, drain well and remove any bones/skin if preferred.
- If using fresh salmon, cook it (bake at 375°F for 12-15 minutes or pan-sear), flake with a fork, and let cool.

Mix the Ingredients:
- In a large bowl, combine salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, pepper, parsley, onion, and celery.
- Mix well until the mixture forms a cohesive dough.

Shape the Patties:
- Form into 4-6 evenly sized patties, about ½-inch thick.
- If the mixture is too wet, add extra breadcrumbs; if too dry, add a bit of mayo or an extra egg yolk.

Cook the Salmon Patties:
- Heat olive oil and butter in a skillet over medium heat.
- Once hot, place the patties in the skillet and cook for 3-4 minutes per side until golden brown and crispy.
- Remove and place on a paper towel-lined plate.

- Serve hot with lemon wedges and your favorite dipping sauce (tartar sauce, garlic aioli, or spicy mayo).
