For the Smash Burgers:
- 1 lb (450g) 80/20 ground beef (high fat for juiciness)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 slices American cheese (or cheddar)
- 4 potato buns (or brioche)
- 1 tablespoon butter (for toasting buns)
- ½ cup sliced pickles (optional)
- ½ cup shredded lettuce (optional)
- ½ small onion, finely diced (optional)
For the Baconnaise Sauce:
- ½ cup mayonnaise
- 3 slices crispy bacon, finely chopped
- 1 teaspoon Dijon mustard
- ½ teaspoon smoked paprika
- 1 teaspoon pickle juice
- ½ teaspoon garlic powder
- ½ teaspoon black pepper

Make the Baconnaise Sauce:
- Mix mayonnaise, chopped bacon, Dijon mustard, smoked paprika, pickle juice, garlic powder, and black pepper in a bowl.
- Stir well and refrigerate for 15 minutes.

Prepare the Buns:
- Spread butter on the buns and toast them on a skillet over medium heat until golden brown. Set aside.

Form and Smash the Patties:
- Divide ground beef into 4 equal-sized balls (about 4 oz each).
- Heat a griddle or cast-iron skillet over high heat for 5 minutes.
- Place one beef ball onto the hot surface and smash it flat with a metal spatula until thin.
- Season with salt and black pepper.

Cook the Burgers:
- Cook for 45-60 seconds until crispy edges form.
- Flip the patty, immediately place a slice of cheese on top, and cook for another 30 seconds until melted.

Assemble the Burgers:
- Spread baconnaise sauce on the bottom bun.
- Add shredded lettuce, pickles, and onions if using.
- Place the cheesy patty on top and close with the bun.
