Ingredients

Scale

For the Smash Burgers:

  • 1 lb (450g) 80/20 ground beef (high fat for juiciness)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 slices American cheese (or cheddar)
  • 4 potato buns (or brioche)
  • 1 tablespoon butter (for toasting buns)
  • ½ cup sliced pickles (optional)
  • ½ cup shredded lettuce (optional)
  • ½ small onion, finely diced (optional)

For the Baconnaise Sauce:

  • ½ cup mayonnaise
  • 3 slices crispy bacon, finely chopped
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika
  • 1 teaspoon pickle juice
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper

Instructions

  • Make the Baconnaise Sauce:

    • Mix mayonnaise, chopped bacon, Dijon mustard, smoked paprika, pickle juice, garlic powder, and black pepper in a bowl.
    • Stir well and refrigerate for 15 minutes.
  • Prepare the Buns:

    • Spread butter on the buns and toast them on a skillet over medium heat until golden brown. Set aside.
  • Form and Smash the Patties:

    • Divide ground beef into 4 equal-sized balls (about 4 oz each).
    • Heat a griddle or cast-iron skillet over high heat for 5 minutes.
    • Place one beef ball onto the hot surface and smash it flat with a metal spatula until thin.
    • Season with salt and black pepper.
  • Cook the Burgers:

    • Cook for 45-60 seconds until crispy edges form.
    • Flip the patty, immediately place a slice of cheese on top, and cook for another 30 seconds until melted.
  • Assemble the Burgers:

    • Spread baconnaise sauce on the bottom bun.
    • Add shredded lettuce, pickles, and onions if using.
    • Place the cheesy patty on top and close with the bun.
  • Serve & Enjoy!

Notes

  • Smash with force to get a crispy crust.
  • Use a hot griddle for maximum caramelization.
  • Don’t over-season the beef—salt and pepper are enough.
  • Chill the baconnaise sauce before serving to enhance flavor.
  • Double up on patties for an extra indulgent smash burger.
