- 1 can (400 ml) coconut milk
- 1 cup basil leaves, chopped
- 1 cup jasmine rice
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon vegetable oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat. Add the chicken pieces and sauté until browned on all sides, about 5-7 minutes.
- Stir in the red curry paste and cook for another 2 minutes until fragrant.
- Pour in the coconut milk and fish sauce, mixing well to combine. Bring the mixture to a simmer.
- Reduce the heat to low and let it simmer for about 15 minutes, allowing the chicken to cook through and the sauce to thicken.
- Stir in the chopped basil and lime juice, and season with salt and pepper to taste.
- Meanwhile, cook the jasmine rice according to package instructions.
- Serve the spiced coconut basil chicken over the jasmine rice and garnish with additional basil if desired.

- For a vegetarian option, substitute chicken with tofu or chickpeas.
- Adjust the amount of red curry paste to control the spice level.
- Fresh basil is key for authentic flavor, but you can substitute with Thai basil if available.
