For the Chicken:
- 1.5 lbs boneless, skinless chicken thighs (or chicken breasts)
- 1 tablespoon vegetable oil
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Teriyaki Sauce:
- ½ cup soy sauce (low sodium preferred)
- ¼ cup honey or brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons mirin (or extra honey if unavailable)
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 3 cloves garlic, minced
- 1 tablespoon cornstarch + 2 tablespoons water (for thickening, optional)
- 1 tablespoon sesame seeds (for garnish)
- 2 green onions, chopped (for garnish)
Instructions
1️⃣ Prepare the Sauce
- In a small bowl, whisk together soy sauce, honey (or brown sugar), rice vinegar, mirin, sesame oil, ginger, and garlic.
- If you prefer a thicker sauce, mix cornstarch with water and set aside to add later.
2️⃣ Cook the Chicken
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Season the chicken with salt and pepper, then add it to the skillet.
- Cook for 5-6 minutes per side until golden brown and fully cooked.
- Remove chicken from the pan and set aside.
3️⃣ Make the Teriyaki Sauce
- In the same pan, pour in the prepared teriyaki sauce.
- Simmer for 2-3 minutes until slightly thickened.
- If using cornstarch, add the cornstarch slurry and stir until the sauce reaches the desired consistency.
4️⃣ Combine and Serve
- Slice the cooked chicken into bite-sized pieces.
- Return the chicken to the skillet and toss in the sauce until well coated.
- Garnish with sesame seeds and chopped green onions.
- Serve over steamed rice or noodles and enjoy!
