Description

Make homemade Teriyaki Chicken in under 30 minutes! Juicy, savory, and slightly sweet—perfect for rice bowls, stir-fries, or meal prep

Ingredients

Scale

For the Chicken:

  • 1.5 lbs boneless, skinless chicken thighs (or chicken breasts)
  • 1 tablespoon vegetable oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Teriyaki Sauce:

  • ½ cup soy sauce (low sodium preferred)
  • ¼ cup honey or brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons mirin (or extra honey if unavailable)
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch + 2 tablespoons water (for thickening, optional)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, chopped (for garnish)

Instructions

1️⃣ Prepare the Sauce

  • In a small bowl, whisk together soy sauce, honey (or brown sugar), rice vinegar, mirin, sesame oil, ginger, and garlic.
  • If you prefer a thicker sauce, mix cornstarch with water and set aside to add later.

2️⃣ Cook the Chicken

  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  • Season the chicken with salt and pepper, then add it to the skillet.
  • Cook for 5-6 minutes per side until golden brown and fully cooked.
  • Remove chicken from the pan and set aside.

3️⃣ Make the Teriyaki Sauce

  • In the same pan, pour in the prepared teriyaki sauce.
  • Simmer for 2-3 minutes until slightly thickened.
  • If using cornstarch, add the cornstarch slurry and stir until the sauce reaches the desired consistency.

4️⃣ Combine and Serve

  • Slice the cooked chicken into bite-sized pieces.
  • Return the chicken to the skillet and toss in the sauce until well coated.
  • Garnish with sesame seeds and chopped green onions.
  • Serve over steamed rice or noodles and enjoy!

Notes

Use chicken thighs – They are more flavorful and juicier than chicken breasts.
Marinate for deeper flavor – If you have time, marinate the chicken for at least 30 minutes.
Let the sauce thicken – Simmering enhances the taste and texture.
Don’t overcook the chicken – Keep it tender and juicy.
Use fresh ginger and garlic – It makes a huge difference in taste.
